Do you think there are any cats that should have had a different design?
Ex: Alderheart should have been brown and not ginger, Blackstar should have been mostly black instead of mostly white, Leafpool should have had green eyes instead of amber, and Crowfeather should have had amber eyes instead of blue

Hard disagree on brown Alderheart, since alder trees are red on the inside :) It's quite striking and I suspect where the name came from! Same with Blackstar honestly, I think he has one of the more memorable designs in the books and I wouldn't want it changed.
I always thought Frostpaw should be a pale colorpoint cat, mostly white, instead of being yet another generic grey she-cat. So I usually draw her that way. I like green eyes more for Leafpool and Spottedleaf, and I will always accept literally-dark-blue Bluestar (think like the older official art) more than the "just pale grey" she's usually drawn with nowadays. And I kind of wish Sunbeam was more of a golden tabby rather than a brown one.

In the allegiances she's just described as gray You're right, there's nothing in the official books that suggests it :/ There is an image on the website page for her that gives her a colorpoint design, that's what I was referring to. Now, that's probably influenced by fandom consensus, but it's something. I do wish that they actually committed to it and brought it onto the cover or into the allegiances, though. Anyways, I'm being pretty nitpicky, so that's all I'm going to say.

Tigerheart and by extension, Strikestone should have remained/been golden tabbies. To add onto this, Strikestone should have had some white like his father, Crowfrost.
Frostpaw should have been a pure white protagonist. Graypaw should have been some variant of gray instead of silver to match his name better.
Splashtail should have been silver, white or some gray variant. Instead we have another brown cat villain. A bi-color of either would have been nice.

Storm should have been ginger/a ginger tabby. Frostpaw should have been a colorpoint. Splashtail should have been blue-gray or silver.
I also feel like Bristlefrost should have had a more interesting design, like being a dilute calico. At least Dovewing, Frostpaw, and Twigbranch both have interesting design choices that set them apart in official and fan art, but Bristlefrost is just a plain oldpale gray cat.

I actually really don't like dilute tortie Bristlefrost. Something about giving a cat named -frost yellow patches y'know. But I agree her canon design is boring. I like to imagine her as one of those silver shades cats instead.

Yes. Frostpaw is a gray colorpoint cat. These cats are beautiful, esp the ones with a pale gray body and darker points. I suspect she was named “Frost” because her paler gray looked frosted next to the darker gray.

Hard disagree on your Blackstar opinion. It's one of the most interesting name to colour combos in the books, and worked very well with his Warrior name.

I think that leafpool should be a cream or fawn cat due to the fact that genetically she cant be brown (i also love when ppl make tortie leaf pool designs) Idk but I always saw Wind Runner/Windstar as a black cat I agree genetically Crowfeather cant have blue eyes bc of his lack of white Frostpaw is a grey colorpoint Have to disagree with alderheart, genetically he got his red from his mother, which works, also alders are red inside. Storm shouldve been a tortie or dilute tortie to give thunder his red
