why do all of them have multi pov books?

In my eyes, Firestar was the kind of character where it made sense that he got to see so much of the plot. Not being born a Clan cat, he went around the rules often when it made sense and actively learned more about the plot. This kind of gathered information would not feel as natural if it was always a single character gaining all of the knowledge on any side of a conflict.
Each next arc that deals with issues spanning multiple Clans makes sense to incorporate more POVs so it feels like a more natural way to convey information to the reader. TNP had the journey as well as what was happening back in the Clans. Sure, maybe it could be narrowed down to Brambleclaw and Leafpool, but it still makes sense to me that there are multiple protagonists here. Po3 is about the lives of three cats. While it could be compressed to just Jayfeather who can tell what others are thinking, it felt important that the three were individuals as well. OotS has the Dark Forest plot as well as so many things happening that are outside of Ivypool’s interest. DotC starts with a single POV, but it would be difficult for Gray Wing to see the struggle between Thunder and Clear Sky from the moor, or the rescue of his kits from his deathbed. AVoS is a similar start with a single protagonist but expands that since Alderheart isn’t part of ShadowClan or SkyClan. and showing the Clans inside and outside of the Kin would be difficult with a single protagonist. TBC has POVs across three different Clans looking at different aspects of a plot with multiple major players. ASC isn’t finished yet but showing a Clanswapper narrative separate from the murder mystery makes sense to me, though if any arc could work with a single protagonist, it may be this one.

I think it’s nice ASC has Nightheart and Sunbeam because of Berryheart and her connection to RiverClan in Star as well.

It worked fine with all arcs up to AVOS. What does Alderheart even do after Book 1? In ASC, you could remove Sunbeam and Nightheart's perspectives - just have the plot go on but not include their POVs - and nothing would change. Rootspring is the same, too. He's useful for seeing that Bramblestar isn't really in his body, but after that he's useless.
