Probably Graystripe, as he's pretty much the one character who's pointed out to eat a lot to the point of bellyache sometimes. But there's a lot more to his character than that.

I can see Graystripe. I can also see Cloudtail, for when he would sneak off to eat some kitty food all the time as an apprentice, lol

While Gluttony has its stereotypes in overeating, the sin can also apply to far more than just food. Not to mention Graystripe and Cloudtail both didnโt succumb to this vice, otherwise Graystripe wouldnโt have bothered with a long journey back to the other Clans if it meant he could freely stuff prey into his mouth under a corrupted ThunderClan. Same with returning to the Clans at all, the life of a kittypet is/can be luxurious.
Brokenstar comes to mind for this sin, replace food with the young lives of ShadowClan instead. And eventually ThunderClanโs kits, if he had been able to toss them aside too.
Despite his claims of ShadowClan needing more territory, he ironically, never uses WindClanโs new territory that I can recall. Which might throw him into Greedโs territory instead since he acquired and hoarded something he desired instead. (Which does create an interesting throw-back to Swiftstar and Dawnstar considering he was the destined curse upon the Clans for driving out SkyClan.)

I would say Brokenstarโ he just kept eating up territory, using up the lives of his Clanmates and kits, and he was still never satisfied. In Exile from ShadowClan, Nightpelt thinks his hunger for power and land will be sated by driving out WindClan, but itโs barely blunted. He refused to feed the sick or elderly, insisting he and his strongest warriors deserved all the fresh-kill.
Another angle to gluttony could be โbattle-hungry,โ which fits Brokenstar well. He is constantly leading his warriors into battle again and again, for literal seasons on end. He is so obsessed with battle, he wants to train apprentices solely in fighting, and his gluttony for war consumes everyone around him. (This also fits Thistleclaw, who is constantly described as battle-hungry, and whose obsession with battle brings about his own death.)

The mouse thing with Longtail happened during what? Winter time? It was a one time thing. The books might imply Darkstripe did this often because he's a villain but theres other more suitable candidates for the title. Graystripe, Cloudtail or Brokenstar are the main contenders in my head.

Cloudtail, Brokenstar or Graystripe.
Cloudtail for his antics in Rising Storm as an apprentice where he had a double life of being a Clan cat and kittypet while getting well fed by both.
Brokenstar for how it got noted in Into the Wild that him and his inner circle of warriors were looking well fed while the rest of ShadowClan looked starved, implying that they ate the biggest share of prey while the rest of the Clan got scraps/had to fend for themselves.
Graystripe for that bit of him being forced to eat multiple mice by Tigerclaw in Into the Wild. Although that was not really his fault. I do remember him being noted to have a big belly on another occasion later on although I'm not sure which arc it was (PoT, OotS or AVoS).
I'm nominating Brokenstar though. Because unlike with the other two, his act of gluttony could definitely also go with a hunger for battle, not just the overindulgance of food.
