Long story short I'm writing a wolf-centered animal-xenofiction story for NaNoWriMo and I'm curious about which people prefer? The realistic family dynamic pack which revolves around the wolves nuclear family or a much less realistic but seemingly more popular alpha/beta/omega pack which includes non-family members? Take the realism with a grain of salt though since it's a story about anthropomorphized wolves lol.

i mean, a wolf pack is going to have an alpha, a beta and omega no matter where you look cause thats how they work, even irl and of course there are more ranks then those three if needed.
However, just do whatever you feel is right or what you feel the most comfortable writing.

The closest thing to an "alpha pair" in wolves I'd say would be just the breeding pair, the “alpha/beta wolf” behavior appears only in captive wolves pushed into a group from a range of different backgrounds and not naturally. So yes but no. I don't mean to say you're wrong cause they do exist in captivity.
Honestly I think that's all that matters haha, I'll more than likely just keep it to natal packs.
