Tigerstar as well as his two sons (sorry Tadpole) Brambleclaw and Hawkfrost often get portrayed differently in fanon than what they look like during canon. I personally always imagined them to all be longhaired/sort of similar to Maine Coons which is how they are mostly (but not only) drawn in fanart. Canon has made them out to be shorthaired though with the most recent official artwork of that also being the Graphic Novels although Hawkfrost has one picture of himself in The Ultimate Guide as a more fluffy cat. I find it pretty interesting too, but it would be hypocritical of me to say I don't like the fan art.
I think a partial reason for it may be because they appear to be more intimidating and stronger when they have longer fur?
I don't know, but looking at the official art for them makes them seem much more skinnier/smaller than I feel they're portrayed to be.

I definitely think long fur would benefit them as it bulks them out more. When I think of short-haired cats, I don't think of bulky. Given that all these cats are supposed to be massive, their fanon appearances do them well

I think that the problem is that people overestimated what the word "massive" means. Tigerstar is a big dude, but he's big in the same sense someone who's 6'6" is. He's not a giant in the sense that he's quite literally a breed apart. I think this is made incredibly clear in Squirrelflight's Hope. The Sisters actually ARE giants who are a breed apart, and it's made clear that they're bigger than Brambleclaw by a substantial degree.
I kind of wish there were more takes on the Tigerkin which had them be more reasonably sized, it honestly makes them look more threatening to me. Really big cats end up looking a bit fat and lethargic to me.

The way Tigerstar appears in A Shadow in RiverClan simply felt a bit off for me as I prefer him to be fluffy or at least fluffier, similar to the manga version of Graystripe.

That's the beauty of personal interpretation. But it sadly doesn't change the fact that Tigerstar and Darkstripe are both slim/shortfurred toms in canon or at least in official artwork. Then again, there isn't much of it out there when picturing what Darkstripe looks like as A Shadow in RiverClan was where he had his first actual drawn appearance.

Tigerstar is a massive, tall, sturdy, heavy, thick-furred, dark brown tabby tom. He has unusually long, sharp front claws, a broad chest and shoulders, and wide, pale amber eyes. His right ear is split in a deep "V" shape near the top, along with a scar on the bridge of his nose, and his pelt is criss-crossed with long battle scars.
Bramblestar is a huge and muscular dark brown tabby tom with amber eyes. He has sleek fur, long, curved claws, and a long scar on his shoulder.
Hawkfrost is a huge, muscular, long-legged, broad-shouldered, mackerel-striped dark brown tabby tom with a snow-white underbelly, and matted, dull fur. He has a bushy tail, a scarred, broad muzzle, long claws, huge paws, and ice-blue eyes.
Everyone can do with these descriptions what they want. It has always appeared to me that Hawkfrost was a different, maybe darker, shade of brown than his father and brother. Maybe a little bit more... chocolate like? You can also see it a little bit in the official art. But, well, that's my opinion.
