They’re all grumpy babies, but I would see Holly being leader since she’s very serious to the warrior code so she may take leadership seriously as well. Cinderheart could be a good deputy for her since they are best friends that work well together, this would probably make her a more developed character than her just being Lionblaze’s mate, honestly I would love her to end up with Hollyleaf instead, I think they would be good for each other.

I think Lionstar is a cool idea given his performance in TBC. I don't think he's quite cut out for it, but he also clearly does put forth some effort into it. It would be interesting to see such a situation.
Hollyleaf would be interesting too given her ego problems but if it's PoT Hollyleaf, I imagine her tenure being short and very bloody. And if it's OOTS Hollyleaf, well I dislike her on principle anyway.

Hollyleaf's problem in PoT is a massive lack of self esteem that she attempts to make up for either with her supposedly magnificent destiny or by acting as an avenger of all things gone wrong(in those moments she is full of pride). She expects to receive adulation and praise for this stuff, as if it will fill the hole in her soul. Someone like that won't get better by being given more power and praise; they'll always want more. Imagine the kind of things Hollyleaf would do when her ego is eventually slighted and insulted as leader, she was a timebomb ready to go off. We saw that she was genuinely confused and upset that the cats at the Gathering weren't praising her as a hero for exposing the lie to everyone. That's not the kind of mind that's going to make for a stable leader. It's the kind of mind that's going to lead to endless battles over insults both real and perceived, take out her frustrations and personal ego on her clanmates, and have an incredible need to try to control everything. While it's possible she could manage to hold on for a long tenure by doing this, at the very best I can see her coming off as a Onestar esque leader, who is too ridden with paranoia and envy for others that she's spiteful and nasty towards others unnecessarily.

Hollyleaf definitely would’ve been best for the job. She was serious and dedicated to the warrior code. She would’ve been an excellent leader who could probably easily keep the Clan under control. She has been shown to have leadership skills so many times and she genuinely cared so much about the wellbeing of ThunderClan.
Lionblaze is too impatient and jumps into things head first without thinking it out first. TBC showed exactly why he should NOT be leader. The dude will probably get cats killed. He would be an interesting leader because he would cause drama, but I don’t think he is fit for the position.
Jayfeather is a really odd option. I prefer him as a medicine cat. I don’t think a blind leader would really be a good idea, although sometimes I do wish he was a warrior. Also, he’s quite grumpy and often snappy and I don’t think that’s a trait that’s good in a leader.

She always overreacted over everything, even when Millie asked to keep her name. I feel like she'd be pretty disrespectful and very controlling as a deputy in Po3, to be honest. But after her returning? She's so much more respectful and mature, I feel like by then she was ready to become one. Too bad the Erins killed her off and wasted that.

I chose Lionstar for obvious reasons (my current decription says it all) and also because out of The Original Three he could still have a chance to actually become leader. Either of his littermates would've been interesting as well though.

Jayfeather will obviously not cut it out for leadership, so I'd like to see either a Hollystar or Lionstar. Both cats' personalities would make for some interesting leadership times imo.

Any. They'd all be completely crazy and that would make a lot of drama, which I live for. Unfortunately, that same reason makes them all extremely unlikely to be chosen (obviously at this point only Lionblaze is in the running, but assuming we're time traveling or rewriting or whatever).
I would have liked to see Jayfeather in a Runningnose-like situation in TBC, honestly. Where both the leader and deputy are out of commission so the Clan looks to the medicine cat for guidance. I think that would have been way more interesting and a bit more realistic than Lionblaze being acting acting leader.

realistically probably Lionstar or PoT-Hollystar, but the thought of Jaystar or just a blind character in general as the leader of a Clan has always been something that's really interesting imo

Hollystar seems like an interesting candidate to me.
I realise now, that Hollyleaf murdering Ashfur made her more alike him than anything. The possibility that she's willing to cover up (initially) Thunderclan secrets in an arguably selfish way but still value the warrior code suggests that she could contradict herself greatly but make for a great (or at least thought to be) leader.
