Their relationship came out of nowhere. I don't recall them interacting with each other during TPOT.

They did interact, but it was him getting angry at her for nagging him about going out of camp and stuff.
I think they possibly bonded over Hollyleaf's "death" since they were both super close to her.

The better question is... What did Cinderheart see in Lionblaze? He is a potato.

I'm so sick of this idea that if two characters aren't interacting in one arc, then it's "stupid" that they are friends/mates/whatever in the next arc. In real life, two people that never noticed each other before get together all the time. You could argue that it should have been planned out better, but it's Warriors. Nothing is planned out past three books.
As for what they saw in each other, I'm sure they both had an admiration for each other (Lionblaze being the best fighter in the Clan and Cinderheart being kind and clever), and they started spending a lot of time together in The Fourth Apprentice, because they were mentoring sisters. Their relationship developed from there. It's actually a good, arc-spanning relationship if you look at the details, but Lionblaze gets totally pushed off to the side in OotS, so you have to really look to see it, unfortunately.
LionXCinder is my favorite ship, I might be bitter.

That's fair, but it's also for you. While you specifically might need to be friends for a while before dating someone, and may even give that advice because you believe that's best (something I agree with, actually), other people just get together immediately, or don't notice each other for awhile, or any number of things. You can't control other people, and my point was that it happens in real life all the time. There are a lot of valid and fair criticisms of LionXCinder. Them not interacting a lot in Po3 is not one of them. And this part isn't directed at you specifically, just a statement I want to make clear.

LionXCinder is my favorite ship, I might be bitter.I'm with you on this. Some of the drama was a bit Much, but there's nothing wrong with how they're relationship started out. Lionblaze probably saw her more as Hollyleaf's friend than as her own person until he started mentoring with her, at which point he started to see her for her, amd vice versa for Cinderheart. They probably liked each other as casual friends beforehand, but just didn't really pay much attention to each other. As for what Lionblaze saw in her, she was fun and kind and a good mentor and managed to pull him out of his own head when he was brooding in FE. In all honesty, I think LionCinder, on the whole, is one of the better ships in Warriors (at least in the main series). They get a some focus, unlike... every DOTC ship, they actually seem to like each other, unlike LeafCrow, and they generally contained their drama to about half an arc, unlike BrambleSquirrel.

Because books should be show not tell. Lionblaze was one of the main characters, the least they could have done was give him a proper romance. He had more development with Heathertail, and that's just all-around sad imo. I don't even like Lion x Heather, yet the set up for their relationship and even their drama was way more interesting than the stale boring get together plot of Lion x Cinder. I don't care for either of them tbh. Cinder should have just cut her loses and got with Hollyleaf, lol.

I kind of remember them bonding over both being athletic cats who liked to run around and climb trees and stuff just for fun.
