Is there not an option for it? Or am I missing something here?

I do not believe there is currently an option for that.
Right now, I'm just picking the 'may choose up to x answers' and putting an empty slot between questions.

Hopefully there can be an option to extend the questions per poll, but I actually don't know if proboards supports that or not. We never really used polls on my other boards, and I've never explored that.
