He is pretty much rejecting the commonly shared but ineffective values that the book series has. Onestar has absolutely NO reason to give them the medicine, and his behaviour did a pretty good job of showing young viewers that not everybody is nice and actually very few would bother going outback of their way to help clean up your mess

I disagree.
Refusing to help another Clan because they're "evil"? Quite racist, I say.
Also, let me remind you that he is quite a hypocrite on that part since I remember clearly in Forest of Secrets (haha, I've read that book a million times so I should know) that when there was the big rivalry between ThunderClan and WindClan (and ShadowClan) for sheltering Brokentail, and Onestar (Onewhisker then) apologised to Fireheart and said he wished that things weren't that way, which shows that he is not a fan of Clan rivalries.
The drastic change was unneeded in my opinion. I liked Onewhisker's and Fireheart's friendship, but not Onestar's and Firestar's, for obvious reasons.

I don't believe he's hypocritical.

I don't believe he's hypocritical. I'm not a very big fan of Onestar's very drastic change, lol. But I understand why he may have done it. The stress of a new Clan to take control of that is very shaken after Tallstar's death is difficult, and it may have gotten to him. It also proves that he doesn't have a lot of strength in character, because Tigerstar seemed to be able to rebuild a Clan (that had it much worse since they believed the sickness took all the lives of Nightstar and it also took the deputy) without much stress (maybe infuriation though).

While I understand why he's changed and it does make him an interesting character, many of his actions were completely unnecessary, like when he attacked ThunderClan in the middle of the night in their own camp no less for no good reason. And him refusing to give up herbs because he blamed ShadowClan for something the rogues did was a little too much since many cats were dying, including kits and elders. His behavior has even gotten to the point where even his own Clanmates are afraid of him.

I don't believe he's hypocritical. How is Onestar not hypocritical? Besides the example Feather gave, Onestar also said that WindClan can stand on its own, yet makes an alliance with RiverClan to attack ThunderClan in their own home and would've driven them out if it weren't for ShadowClan, much like how ShadowClan themselves drive WindClan out of their home at night under Brokenstar's leadership.

Onestar tries too hard to make Windclan look rough. Period
