Because Warriors isn't realistic. I never realized this before. Another reason why I'm not fond of OotS. However perhaps it could explain why she took everything out on Dovewing while she was an apprentice? They began to manipulate her when she was an apprentice. Ivypool gave her sister a hard time. Due to lack of sleep and feeling left out her behavior with Dovewing makes a bit more sense with the things you have pointed out.

the way I decided it worked--to make sense of it--was that the cat still gets their sleep, but the DF time, like, adds to their day?
so if Ivypool sleeps for, I don't know, 8 hours and is in the DF for those 8 hours
then she gets 8 hours of sleep, but she also gets 8 extra hours of fighting?
so they would still get tired from adding all that time to their day, but they get sleep as well
like, she's sleeping for a normal amount of time for a 24-hour day but she's living a 32-hour day

I was honestly confused about this, too. Warriors does not do a good job of discerning the line between body and soul, and to me it seems like a blurry venn diagram at this point. As one who has officially gone approximately three days without sleep, I can say that for some reason I was still functioning on a high level up until the very, very end of day three. And even still, I then had troubles falling asleep that night. Granted, I am human, and I doubt that cats function nearly the same way we do (and I'm sure no one has ever had a cat stay up for three or more days straight). However, I feel as though perhaps her distressed sleep was still adequate.
I know this is all based off of personal experience, but to be honest I have not gotten very good, restful sleep in years. I believe it started when my anxiety began at the age of fifteen, and since then there has not been a single day where I wake up feeling refreshed or even as though I've slept at all. No matter how long, I never feel like I've slept, which is why staying up for three days straight really didn't feel like it did much of anything to me. My doctor told me that, while she doesn't know why I don't rest well when I sleep, it's obvious that my disturbed sleep is still adequate enough to keep me alive and going. Therefore I think biology simply kicks in and takes what it can get. I believe that perhaps it worked the same way for the cats who went to the Dark Forest.
However, the Dark Forest still confuses me, because I do not like the lack of distinguish between body and soul. The physical manifestation of wounds doesn't correlate with the sleep/lack thereof. I simply believe that the Erins just didn't think it through well enough.

Ivypool was allowed to take naps in later books because of how sick she looked which allowed some energy recooperation in the later books. Its just what you describe seems more like what happened to Dovewing. She had constant nightmares about swoop dying which makes the dark forest more odd. the effects on the body in the waking world are like a nightmare. but the dark forest isn't.... loopy? enough to be a nightmare. most dreams are like bad fanfiction. they have a plot but theres a lot of weirdness. I guess we can only settle with the erins didn't think this through.

I think it is similar to how the medicine cats go into StarClan at the moonpool. They don't seem tired in the morning even though their bodies and spirits are in StarClan territory. And I'm pretty sure that cats can die in StarClan since Jayfeather would have drowned if Flametail didn't help him. They can also get wounded in StarClan as Onestar and Tallstar had a fight in StarClan once where Onestar got a scar from.
So my guess is that when living cats are in the afterlife, the rules of the afterlife apply to them. They can get wounded and die, but don't need to eat or sleep.
