What is the best Protag/mom dynamic? Me personally, the obvious answer is Jayfeather and Leafpool.

Narratively, like in terms of interest. Probably Sunbeam and Berryheart for me. In terms of who I think is the best in terms of a good relationship, Bramblestar and Goldenflower

I don't get the ivypool/Bristlefrost vote (sorry), it's just that I only ever remember Ivypool say anything to/interact with Bristlefrost is after she died and asked Rootspring to try "summoning" her. Hell, she didn't even want to stay in the nursery with them.

Leafpool and Jayfeather has a lot of layers to it. From "doting aunt and troublesome nephew" to "sulky apprentice and nice mentor who doesn't let him off when he's on his bullshit" to "furious son and well-meaning and socially disgraced mother" to finally "son and mother that more or less reached an understanding". They just have a really layered and well-developed relationship throughout the series.
Leafpool isn't the perfect mother and Jayfeather certainly isn't the perfect son. They get mad at each other, Jayfeather will be a douche and Leafpool will chew him out, Leafpool might be a little too short or absorbed in something and end up misstepping or taking a bad approach, but they always work it out EVENTUALLY. And for how easy it is to talk about how Jayfeather is clearly Crowfeather's son, he's also quite subtly also Leafpool's kid.
And how deep the relationship runs really shows. While he doesn't have the same initial explosive burst of rage that Lionblaze does or the absolutely destructive breakdown Hollyleaf undergoes, his grudge against Leafpool clearly burns the longest and coldest. And why shouldn't it? He spent the most time with her and trusted her the most. The idea that she hid such an important aspect of their relationship from him for so long, not trusting him with it and intentionally deceiving him - regardless of how well-intentioned she was - had to have been by far the worst betrayal he considered himself to have suffered. (And Jayfeather takes perceived betrayals really poorly in general. Remember how hard he blew up on Rock and the stick in TFA for the same issue? And Rock isn't even somebody he spent that much time with, or had familial bonds with.) How long he holds the deception against her is almost directly correlated to how hard he found it to forgive her, because of how deeply it hurt - which really indicates how much he actually loves and values Leafpool.
Leafpool really cares deeply for Jayfeather as well. Sure, she loves all of her kids, but we get to see the most out of that relationship. In some ways, she's most worried about him because of his vulnerability, and the toughest on him because he's the one on the most bullshit and attitude. And she really gets to spend the most time with him because again, he's her apprentice as well as her son, and gets to share in his successes and feel proud of him on multiple fronts, which most other cats can't really claim. He's also quite clearly the most like his blood father, which has to be hard because it's a reminder of what's no longer there on top of something she has to curb and raise him to avoid replicating too much.
Jayfeather taking Leafpool's death as hard as he did and the bonus scene in Lost Stars felt like a good final tribute to their relationship as parent and child, and I'll proudly admit to it being one of the only instances in this series where I had to blink back tears. It means a lot to me.

Shadowsight and Dovewing were cool, from what I've seen of them. Also I don't think anybody is picking the first one.
Why is Bristlefrost & Ivypool winning? They didn't get much interactions while Bristlefrost was alive. Is this based on Ivypool's grieving of her? Because even then, we haven't seen much of that.

I hope that the relationship between Bristlefrost and Ivypool will be explored/shown further during flashbacks in Ivypool's Heart. Since they truly didn't have many on-screen scenes together during AVoS and TBC and I thus also don't fully get the amount of votes for them either even though I love both characters.
