It always bothered me how ThunderClan had three medicine cats, but I think I might understand why now.
Since the Erins are so reluctant to kill off more cats, ThunderClan's numbers continue to grow. Everytime a few cats die, more than that are born almost straight after. I am not exactly sure how many cats ThunderClan currently has, but I believe it's somewhere around the 40-50 mark. If this continues, they will some day have 100 cats.
As the Clan grows bigger and bigger, it makes sense to have more medicine cats. One or two cats just cannot possibly take care of that many cats on their own. If a massive battle happened and everyone got hurt, lives could be lost because there were not enough medicine cats working.
Now with that said, do I think ThunderClan needs to add a fourth medicine cat straight away? No, of course not. Three is enough at the moment, and even without Leafpool, ThunderClan still has Brightheart to help out if need be. ThunderClan does not need a fourth medicine cat for a long, long, long time now. Perhaps when their numbers hit the 70-80 mark that would be nessessary. But for now, three is fine.
But yeah. That's why I theorize ThunderClan is getting so many medicine cats.

They even have Briarlight who's like an assistant. But I think I read somewhere that Kate thought that it was never explicitly stated on only being two medicine cats when I'm pretty sure that was the exact reason why Spottedleaf had to wait for Goosefeather to go into the elders den. Your reasoning makes sense and I wish it was used in the books.
